Right now, choosing a default value is nested under requiring a value, and we cannot require a value for multi-select collections.
I think this is fair for general multi-select fields but for user fields, the restriction hurts the workflow.
It would be great to default to a task or meeting including the person who created the entity, even though these can be linked to multiple people.
