How should I think about the difference between these?
Is there a final state? If so that is more of a workflow. Especially if there is a predictable flow of start, middle, end. In these situations use a workflow field.
Status such as Active / Inactive, Types, or Tags use to indicate a specific information Iād consider more of a status. For these I would use single select or multiple select fields.
