Automation Rule: How to clear a field?


I cannot find a way to have a rule clear a field (that is, set the field to an empty value).
I tried this by adding an “Update” action to the rule and adding fields with empty update values.
However, after saving the rule, the fields vanish from the Update action.

What am I missing here? Would I need to set up a function? (I checked the function list behind the f button already but found no suitable function there.)
