Is there a keyboard shortcut to add a new entity from anywhere?
Ctrl/Cmd+K for Search - if you then select a specific DB from the dropdown, you can type the name of a new entity and there will be a button to create it.

Is there a way to select the DB without leaving the keyboard?
Tab should work fine to jump on the Database button and Enter to open select
To sum up
- cmd+k for search
- type desired entity name
- Tab, then Enter to open dialog for Database Selection
- navigate with arrow keys
- enter to select the Database
- shift + tab to jump back into search input
- Enter to create new Entity
Not quite convenient but doable
