Can I not change the field name to something other than State?

Yes, this is unfortunately a historical restriction that we want to remove in future

We would like the ability to rename the workflow field as well. Alternatively, allowing us to use the “single select” field and set it so that certain items are grayed out would accomplish the same thing for our use case.
